A common culinary mushroom, Enokitake was the second earliest mushroom to be
cultivated (cultivation started around 800 AD, after Wood Ear -600 AD, and
before Shiitake -1000 AD).
As well as polysaccharides, Enokitake is notable for its high protein content (31.2%), which includes a large number of protein-rich components with strong immuno-modulatory activity.
